Best of...

I have been meaning to post some recipes for a while and now that I have my cookbooks out and I am planning meals for the week I thought it would be the perfect time to share some of the recipes that I have that I love or that other people often ask me for. Hope you enjoy!

Best Cookies EVER!
(these are from one of my best friends Melissa and I am pretty sure they are one of the top 5 reasons that Mike married me...I use to make them for him all the time)

1lb butter
2c sugar
2c brown sugar

4 eggs
4tsp vanilla
1tsp salt

2tsp soda
2tsp baking powder
4 1/2 c flour

3 c quaker oats
1 12oz bag chocolate chips (semisweet)
1 king size hershey almond bar (chopped up into small pieces)

cook at 400 for 5-6 minutes


Best ever sugar cookie recipe
(thank you Lacey...I didn't even like sugar cookies before these)

mix together
2c sugar
1c butter

add and blend
3 eggs
1c. milk
1 tsp vanilla
1 tsp lemon extract (double vanilla if you don't have this)

add and mix
6 1/2 c. flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder

bake at 400 for 6-8 min


Best brownies

2c sugar
1/2c cocoa
1/2c butter
1tsp vanilla
3 eggs
1 1/2c flour
1/2 tsp salt
1/3c milk
(you can add chopped walnuts on top if you like, I usually don't)

cook at 350 for 30 minutes



Best ever chocolate cake with ganache frosting

Chocolate cake mix
3 eggs
1 1/4c water
1/2 c oil
1 small package of instant chocolate pudding
1 c light sour cream
pour into two butter and floured 8 inch pans and cook according to directions from cake box

Ganache
1 package bittersweet or semisweet chocolate chips
2-2 1/2 c heavy whipping cream
2 T butter
Bring whipping cream to low boil, stir in butter, add chips stirring until smooth and melted
pour into a shallow dish, cover and refrigerate for several hours, spread over bottom layer of cake, put top layer on and spread over top layer.


Best ever homemade salsa
1 small jalapeno pepper
5 large roma tomatoes
1 c. fresh cilantro
1 tsp salt
1/2 tsp pepper
2 cloves of garlic
1/4 c fresh lime
1/3-1/2 c. red onion

chop everything up and put in food processor, pulse until it is at your desired chunkiness


Best Cashew Chicken
(this is a family favorite, it's my moms recipe)
chop up 4-6 chicken breasts in small square pieces and marinate in the following
3 tbsp chicken broth
3 tbsp soy sauce
1/4 tsp salt (you can choose to omit this, the soy sauce has a lot of salt already)
1/4 tsp pepper
shake of garlic salt
1 egg white

Marinate for 1/2 hour to hour and then cook in pan and when the chicken is cooked through add cashews and chopped green onions. Serve over rice.
