Mike and I have been loving salads this summer. I always do but it is rare for Mike to eat "rabbit food" so I have been thrilled to find some good salads that are hearty enough for a meal. This one is from the Everyday Food magazine and we loved it. I would take it easy on the dressing and I just used mixed baby greens instead of arugula.
